Choux Pastry Skills

This course is designed to help aspiring bakers or perhaps confident cooks looking to develop their knowledge of essential pastry skills. It is completely hands on and each student will individually make all the elements detailed below.

Students will make a selection of delicious treats:

  • chocolate glazed éclairs filled with fresh cream
  • profiteroles
  • a St Honoré style gateau

The skills covered during this full day class are:

  • pâte à choux
  • piping skills
  • making flavoured crème mousseline
  • chocolate glaze
  • filling, assembly and finishing

Your tutors Sarah and Liz will demonstrate and guide the group before each student begins working on their own. There will be lots of help on the day, as well as tips on other patisserie and variations using the recipes taught on the day. Students will use rough puff (flaky) pastry prepared by the team for their gateau; we also run a class covering other pastry skills if you wish to learn how to make your own rough puff pastry

Whilst no specific experience is required, some basic piping and kitchen skills will be an advantage.

What's Covered:
Gateau St Honoré / éclairs / profiteroles (cream puffs) / crème mousseline / chocolate glaze

Price:
£135 per person - Pay in full online today or contact enquiries@delightfultea.co.uk to pay £67.50 now and the balance 14 days before attendance

Who does this class suit:
Some basic piping experience is advantageous but not essential. This is a hands-on, longer class which may therefore be less suited to 14s. Under 16s must be accompanied by an adult booked on the same course

Length:
10am - 4.30pm approximately, including a short lunch break and some comfort breaks so we highly recommend students bring along a packed lunch. Please note that finish times depend on the size and speed of the group overall, so occasionally may finish a little earlier or later than advertised

What’s Included:
Tuition; all equipment and ingredients; apron to use during the lesson; recipe sheets; lots of helpful hints, tips and baking advice; complimentary refreshments. Students take home everything they have made on the day. Lunch is not included - we highly recommend students bring a packed lunch as breaks will be according to the progress of the group
